Goat Cheese Polenta
Think of polenta like you'd think of mashed potatoes. It is a perfect dish to go with any sauce or gravy. If you get mushrooms in your veggie box, "oh yes, mushroom cream sauce please!" Tomatoes coming out your ears? Roasted Tomatoes and Olives with Grilled chicken another great match up. Our personal favorite is to pair polenta with braised beef like short ribs or even better, beef cheek!
- 3 cups water
- 1 cup cornmeal
- 1/2 teaspoon salt
- 4oz. goat cheese
- 1 TBSP Butter (optional)
- Pinch of dried thyme (optional) (Fun Guy Spice, Black Eye would also work well in this recipe)
- 1/2 cup of chopped roasted peppers (optional)
Add salt to water and bring to a boil. Slowly add the cornmeal, whisking consistently to prevent lumps. Stir until smooth. Simmer for 15 minutes or so until the polenta has thickened. Add the goat cheese, butter, thyme, and chopped peppers and stir until smooth. Taste and adjust salt as necessary. Serve the polenta immediately with sautéed greens with garlic and olive oil, chicken with mushrooms, braised beef, etc.
