A forcemeat of Goose liver and pork is blended with blanched finely diced kale and Porcini Mushrooms. Baked in a water bath, cooled and weighed down for an intensely flavored treat. Enjoy on crackers or our focaccia, or mix with 1 med. sautéed onion, 1 cup finely diced carrot, 1 garlic clove, 1 TBSP tomato paste, 1/2 white wine and 1/2 heavy cream for a crazy decadent Ragu all Bolognese inspired pasta sauce.
